A wonderfully refreshing mocktail with juicy blackberries and lemon balm is a great thirst quencher. I developed the recipe for Bio Suisse and sourced the five ingredients from local farms and organic stores. Fortunately, lemon balm thrives in our garden.
The drinks can be served in two variations: with lemonade and ice, or with non-alcoholic prosecco—whichever you prefer. If you’d like it a touch sweeter, add half a teaspoon of apple syrup.

Ingredients
⁃ 200 g blackberries (36 pieces)
⁃ 2 lemon balm sprigs
⁃ 1 organic lemon
⁃ 7 oz /2 dl sparkling mineral water
⁃ 7 oz /2 dl lemon soda or non-alcoholic rosé sparkling wine
⁃ Ice cubes
⁃ 2 tsp apple syrup (optional)
⁃ 4 cocktail sticks (optional)
Instructions
1. Mash 8 blackberries and 3 lemon balm leaves well with a spoon in each glass.
2. Top up with 1 tbsp lemon juice and 50 cl mineral water (½ tsp apple syrup) and strain into the serving glass.
3. Add 5 ice cubes and top with lemon soda. Omit the ice cubes for the sparkling wine version.
4. Decorate with lemon balm and blackberries. Blackberries can also be added directly to the glass for decoration.
